Marmitas begins franchise expansion in southern Bavaria
Weilheim-based soup and pasta bar Marmitas is seeking its first franchise partners in southern Bavaria. It is looking for entrepreneurs who will work in the business themselves.

Marmitas, based in Weilheim in southern Germany, is preparing to move from an owner-operated hospitality business to a franchise network. Siblings Franziska and Leopold Glas are initially seeking partners in southern Bavaria. This is not an opportunity for hands-off investment: anyone taking on a location will be expected to manage it independently and work behind the counter themselves.
From the original Weilheim outlet to a franchise network
The Marmitas story began in 2011 on Admiral-Hipper-Straße in Weilheim, where the siblings run their soup and pasta bar themselves. The menu includes freshly cooked soups, mix-and-match pasta options and daily salads. According to the company, the concept has been tested in its own business since launch and is now to be rolled out to further locations through Marmitas Franchise GmbH.
This brings a locally rooted hospitality concept into Germany’s franchise sector. The planned expansion will initially focus on southern Bavaria and proximity to the head office in Weilheim. For now, Marmitas is therefore taking a geographically focused approach to recruiting partners rather than searching for sites nationwide.
It is important to distinguish between a proven company-owned business and an established franchise network: Marmitas is at the beginning of building its franchise system. Experience from the original outlet provides the foundation. The next step is to transfer that model to independently operated franchise businesses. The first franchise location will also demonstrate how well its processes can be implemented outside the founders’ own operation.
Hands-on involvement is part of the model
Marmitas is targeting people with their own capital to invest and the motivation to run a business. Previous hospitality experience is explicitly not required. However, partners must be willing to take an active role in day-to-day operations: they will manage their own location, work behind the counter, recruit their team and take financial responsibility for the business.
The franchise website makes this clear: “We are not looking for passive investors.” The opportunity is therefore for an operational business owner, not someone seeking a purely financial stake. This is an important consideration for prospective partners. Anyone primarily looking for an investment, or intending to delegate the entire operation from the outset, would not fit the stated partner profile.
Another feature of the original outlet is its opening hours. In Weilheim, Marmitas opens Monday to Friday from 10am to 4pm and Saturday from 11am to 3pm. These are the hours of the existing business, not a promise that future franchise locations will follow the same schedule. They nevertheless provide a useful starting point for initial discussions: prospective partners should clarify the proposed hours for their location and what these would mean for staffing and their own involvement.
What support the head office promises
The head office in Weilheim promises support with site searches and planning, as well as training, purchasing and suppliers. This is complemented by central marketing, ongoing financial performance monitoring and an internal partner portal called PastaNet.
The announced services therefore cover both preparations for opening and subsequent operations. Site searches, planning and training come first, while purchasing, marketing and performance monitoring support the day-to-day business. For prospective partners, the key questions are how this support will work in practice and which responsibilities will remain with them.
The regional focus on southern Bavaria fits the planned support approach. Proximity to head office makes support and deliveries easier. At the same time, the initial search area remains clearly defined. Anyone interested in a location outside the region should therefore first establish whether their preferred site fits the current phase of expansion.
A trial day before signing a contract
Marmitas describes its partner selection process in five stages. An initial contact form is followed by a face-to-face meeting and a trial day at the original Weilheim outlet. Next come a joint decision and pre-contractual disclosure. Only then are site selection and the franchise agreement intended to follow.
The trial day gives the selection process a practical focus. Applicants can get to know the existing business before making a contractual commitment. Since previous hospitality experience is not required, this step offers a particularly useful opportunity to compare the expected hands-on role with their personal expectations.
For the franchise sector, the significance lies in the transition from an owner-operated concept to a franchise network. Marmitas combines regional partner recruitment, hands-on management and promised central support. Whether this combination works beyond the original outlet will become clear as the first franchise businesses open.
Practical takeaway: Anyone interested in Marmitas should use the trial day to assess the daily workload and their own suitability. Before making a decision, they should also discuss the specific capital required, proposed opening hours and precise scope of support.
